After smoking a turkey for a party on Wednesday night, I had a lot of spare turkey. This morning, I decided to whip up a batch of turkey breakfast tacos. I started by pulling off some turkey from the carcass, putting it into a bowl, and chopping into smaller pieces.

We also had some leftover stuffing from the party. Jessica and I debated on what to do with the stuffing exactly. Should it go on top of the breakfast taco as a condiment or should it go with the turkey and egg? We decided to mix with the turkey and egg. I started by warming a mix of stuffing and turkey with some salt and pepper in a little bit of olive oil.

Once the mixture was sizzling away, I turned the heat down and added the egg mixture. As the egg cooked, I formed two piles and loaded them with shredded cheese. The cheese was a pre-shredded Mexican blend that I got at Trader Joe’s making the process pretty simple. While the cheese melted, we warmed up a couple of Habanero Lime tortillas, also from Trader Joe’s.

The final taco ingredients were dumped into the tortilla, ready to fold and eat. Unfortunately, we did not have any cranberry sauce which definitely would have made a difference in the flavor profile. I was also out of salsa, so had to eat these pretty much as is. They really weren’t that bad, the turkey and stuffing worked fine with the egg and cheese. The spiciness from the tortilla did add a little extra oomph which really helped. While the turkey was still fairly moist and had a slight smokiness, that smokiness was overwhelmed by the habanero spice. Still, these turkey and stuffing breakfast tacos were a viable alternative to turkey sandwiches.
